  • Sliced raw bell peppers (red, yellow, or green),
  • shredded carrots,

Cauliflower Fried Rice

New Year’s is a great time to hit that reset button and start fresh. Although  it’s not an easy task to get back on a healthy lifestyle after holidays, there are many ways you can start- even if it’s small baby steps. Many Filipinos find it difficult to cut out certain food, such as rice. Rice being a staple in Filipino culture is paired with many dishes. Sometimes, it is even a main ingredient in some desserts! However, if you are trying to start fresh and cut down on sugar, rice might be one food to let go.You don’t need to worry, there are many alternatives you can have for rice!

Cauliflower rice is a great alternative!. Cauliflower or rice-like bits of cauliflower, has a similar taste to rice and if grated properly even looks like rice! Here is a simple Chinese-style fried rice  you can make to spice up your simple cauliflower rice meals: 

In the fruit or frozen vegetable section in any store, you’ll definitely be able to find grated cauliflower. But if not, you can use a food processor or hand grater to turn the cauliflower into a rice-like texture. 

For this recipe you need some cauliflower that is grated finely or into smaller pieces ( depending on what you prefer, some seasonings, vegetables (scallions, carrots, peas, ginger, garlic), soy sauce, egs, oil (cooking oil and sesame oil), some rice vinegar and red pepper. It is a balanced, low-carb dish that is sufficiently hearty to serve.

It’s important to have all your ingredients prepped before you start cooking, as with any fast stir-fry. Start by heating a few teaspoons of oil over medium heat in a large wok or large nonstick pan. Add the eggs and a pinch of salt and cook until they are scrambled.

Put the eggs aside and sauté the scallions, ginger, and garlic in oil. Add the grated cauliflower, red pepper flakes, soy sauce, and salt. Cook and stir it constantly, for 3 minutes. 

Finally, you add the carrots and peas. Continue cooking until the “rice” cauliflower is tender-crisp and the vegetables are soft. Add some rice vinegar, sesame oil, dark green scallions, and scrambled eggs.

Garlic Butter Tilapia in Foil Packet

Fish is a big part of many healthy diets due to the different nutrients you can get from it, like healthy fats, oils and Omega-3. Adding fish to your new year’s diet will surely help you on your fitness resolution and journey. Fish such as tilapia is abundant in the Philippines and is a good option for this next recipe. 

Preparing tilapia and other fish in foil packets, and garlic butter is a quick and easy way to prepare your meal. This marinade for tilapia h is delicious and simple. This dish is perfect for the new year’s first weeknight because it is fantastic, fulfilling, and wonderful.

Foil packs are the way to go, and tossing it all in wrapped foil is not difficult. Baked in the oven for a few minutes, the recipe for this foil pack of fish is super satisfying. You need Tilapia fillets, butter, garlic, lemon juice, thyme, or oregano (you can mix them), salt, pepper, and fresh parsley. For an added side dish, you can put beans and other veggies with the tilapia when cooking.

Preheat the oven to 450°F. Tear two heavy-duty aluminum large foil, and it should be big enough to wrap each pack of fish and veggies. Put your fish fillets in the middle and then divide the veggie and season it with salt and pepper.

Mix the melted butter, garlic, lemon juice, dried thyme, and oregano and pour it over the two packets of tilapia. Fold the foil and cover the fish and veggies. To release steam, leave a small opening on top.
Place it on a baking sheet and bake for 15-20 minutes until cooked through, depending on how thick your fish is. It’s cooked when a fork quickly slices through the fish flakes! Sprinkle it with parsley sprinkled on top while it’s still warm.
